For those of you that have been following my column, you
know from last week how much I adore peaches. When I passed by them at the
farmers market this past week, I once again had to buy them. After all, it
won’t be long until they will be finished for the season.
If you thought my grilled peaches recipe was a good one, you’re going to love this salsa.
All of the ingredients in it, besides the lime, are from the farmers market.
And best of all, it’s an easy, no-cook recipe that you can make in a flash. I
served it with chips, but it can also be used with fish, chicken, or in a
burrito.
Easy Peach Salsa
Makes about 2 cups

3 peaches, peeled, pitted and diced
1 jalapeno pepper, minced
Quarter cup of red onion, minced
Half a tomato, seeds removed and diced
1 tablespoon of fresh mint, chopped
Juice of a half of lime
Salt and freshly cracked pepper, to taste

Combine
the first five ingredients in a mixing bowl. Add the lime juice and salt and
pepper to taste. Enjoy.
