Heavenly!

At this time of the year we have tons of options when it comes to fresh fruits and vegetables. Cherries are the ultimate reminder of summer and they happen to be one of my favorites. You’ll find them in my beach bag, lunch bag, and in my ice cream.

I also like to entertain guests this time of the year because we can enjoy the outdoors while noshing on yummy local produce. And when I entertain I look for something easy. Using store-bought angel food cake in this recipe is a shortcut and you can use pound cake as well. Also, feel free to substitute the crème fraîche with vanilla pudding, whipped cream or ice cream. Angel food cake is a crowd-pleaser, and for this recipe I even enlisted some help from kids (that’s how easy it is). We all licked our bowls clean.


Angel Food Cake with Cherries and Crème Fraîche 
Serves 4


Half pound of cherries, pitted and sliced in half
3 tablespoons of sugar

1 teaspoon of lemon juice

1 store-bought angel food cake or pound cake

Third cup of crème fraîche

Half teaspoon of honey

One-eighth teaspoon of vanilla extract


In a small bowl, combine the cherries, sugar and lemon juice. Set aside and let the cherries macerate for an hour.

In a small bowl, whisk together the crème fraîche, honey and vanilla extract. Then, slice or tear the angel food cake into bite-size pieces (you won’t use all of it) and place at the bottom of your dessert dishes. Top with the cherries crème fraîche, and then the juice from the cherries. Enjoy.
