Eating seasonal is not only delicious but also Eco-conscious.
Instead of buying fruits and vegetables that are shipped from other countries,
and not so flavorful anyway, take advantage of what is locally available.
Here are some of my favorite fall-friendly personal recipes!

Hot
Cinnamon Apple Cider
Ingredients:
- Store Bought Cider
- Cinnamon Sticks/ Cinnamon Powder
- Favorite Chopped Apple
Simmer apple cider with your favorite chopped apple and a cinnamon
stick. Add cinnamon powder to taste. When ready to be served make sure each cup
has a few slices of apple. You can also add whiskey if you choose!
Ginger
Cider Cocktail
- Apple Cider
- Ginger Ale
- Vodka
- Cinnamon Powder
Pour about a a shot of vodka into a 8 0z glass. Fill about
3/4 of the way with apple cider. Finish filling glass with ginger ale. Very
lightly sprinkle drink with cinnamon powder and enjoy!
Syrup
and Spice Acorn Squash
Ingredients:
- Acorn Squash
- Brown Sugar
- Butter
- Maple Syrup
- Black Pepper
- Cinnamon
Preheat oven to 400 F. Cut acorn squash in half. Scoop out seeds
and loose pulp. Score acorn squash. Rub about a 1/2 TBSP of butter into each
half of squash. Put a TBSP of Brown Sugar into each acorn squash. Drizzle
a TSP of Maple Syrup to each acorn squash.
Sprinkle with ground pepper and
cinnamon powder. Place in cooking pan lined with water to prevent burning and
keep most. Place in oven and cook for about an hour to an hour and a half. If
you want the acorn squash to become caramelized you can add more sugar and
syrup!
Coconut-Marsala
Roasted Acorn Squash Seeds
- Leftover uncleaned seeds from Acorn Squash
- Coconut Oil
- Shredded Sugared Coconut
- Marsala Powder
- Salt
Warm oven to 350 F. Mix 2 TBSP of Coconut Shreds with
uncleaned acorn squash seeds and a small pinch of Marsala Powder. Grease Pan
with coconut oil (I use spray). Place coconut/squash seed mixture on
tray. Spray again with coconut oil for good measure. Sprinkle with salt (to
taste). Cook for 10 minutes or until desired brownness.
PS. I am a very beginner chef ( and therefore terrible and
following direction) so all of these recipes are extremely simple and can be
easily modified!
